Rhode Island Coffee Milk Pie

Winner in PPAC Contest to Celebrate Broadway Show Waitress

FOR THE CRUST:

1¾ cups chocolate graham cracker crumbs (about 11-12 chocolate graham cracker sheets) – I used regular graham crackers, adding 1 Tbsp of cocoa powder

2 tablespoons brown sugar

1/8 teaspoon salt

1 teaspoon instant coffee granules

7 tablespoons butter, melted

 

FOR THE FILLING:

2¼ cups whole milk

2½ tablespoons coffee syrup

4 egg yolks

¼ cup cornstarch

¾ cup sugar

¼ teaspoon salt

1½ teaspoon instant coffee granules

2 tablespoons butter

 

FOR THE TOPPING:

1 cup heavy cream

2 tablespoons confectioners sugar

½ teaspoon vanilla extract

FINALLY, I sprinkled more rubbed instant coffee on top of the presentation for a coffee ‘dusting’
