* The pie tastes great but it won’t be winning any awards for execution.   The pastry needed to be rolled thinner (and/or the pie plate should have been bigger) and the apples cooked a bit longer.    The crust tasted too salty for a sweet pie crust.   Hub loved it – called the crust “biscuit dough, but it works.”  I don’t think a taster would know about the bourbon if not told it’s an ingredient.    I just looked again at the recipe and think maybe the dotted butter on top of the filling might have been salted but I KNOW I used unsalted in the crust (recipe p.31, PIE by K.Haedrich)   This was my first time not to do the pie crust by hand – I tried the mixer method and I think it worked well.    I didn’t even intend to make the crust, since Stop&Shop’s brand of rolled up pie dough is wonderful but I only had half a box in the freezer.   I didn’t have any vegetable shortening so All-Butter was the only one to make.    The insides of the pie = awesome!   chunk Granny Smiths that were actually easy to peel even without the thingy gadget and lots of cinnamon, nutmeg, clove….   and bourbon.  (recipe p. 223, PIE by K.Haedrich)

    Why oh why do you have to post such mouth watering pics when I am at work :(
    I am going to see pie’s instead of numbers now :)

    I do it solely to torture you! I think using pie as an example to explain numbers would be very applicable and appropriate.

    I think the pie looks much better than any pie I’ve ever baked from scratch. Looks good to me…

    The secret to pretty pies is the glaze and sugar on top!

    It turned out great! Wish I was there to have a slice.. My husband made some dough the other day and the kids and I made thin crust pizza yesterday. I’ll be making cinnamon rolls today. Fingers crossed. :D

    That’s one thing I have yet to make: pizza crust. I like thin pizza, too. I’m sure the cinnamon rolls will be wonderful.

    My favourite pie crust recipe is an all-butter one from the Moosewood Cookbook. I’ll e-mail it to you if you want!

    Yes! I usually make Emeril’s but I’m doing well on my goal to make all the recipes in this PIE book.

    That looks so good! It’s been a while since I’ve had pie and now I want to go out and get me some tasty pie. I need to buy because I want good pie and heaven knows if I make it the only thing wanting to eat it will be the trash compactor. Now I’m going to be thinking pie all day until I get some.

      Nancy, you are SUCH a dear. I’d bake you a pie – I know you love pie. I might even make one so you can bake it in your own oven. ha!
