Happy Easter Pie and Weekly Geeks

I spent last night and most of today so far making PIE!

Written or is it prepared?!  by Ken Haedrich – it’s really good!    He has a wonderfully informal easy-breezy style and is not afraid to tell you to GO-READ-PAGE-# if it’s for something you don’t already know.     In other words, he doesn’t assume you already know a lot which is what most cookbooks do.     I am toying with the idea to set a lifetime goal of trying every recipe in this book.    With 300+, I should be busy for more than a few years.

The pie I made last night is a Chocolate Pecan:

It looks like a cookie, doesn’t it?   I have a bourbon whipped cream to serve with it…

The other pie that I made this morning is Orange Meringue and is NOT in the book!   My Aunt Judy whose birthday might be today or yesterday, I’ve already forgotten -egads!   sent me this…  I will be tweaking it before I make it again because the steps are confusing.

This is my stirring the orange pudding-like pie filling for the Orange Meringue.

I did MUCH better this time with the meringue!   The trick is a small spatula.

I have to go get pretty now and head off to the party where we can dive into these desserts after the big meal.   Happy Easter!

    Ahh those are such yummy looking pies! I can do meringue quite well, but I’m still looking for the perfect pie pastry crust recipe. My favorite pie crust was my nan’s but she cooked and baked by throwing things in a bowl without a recipe – they always tasted heavenly! I wish I had that magical talent :)

    I think you should go for trying all the recipes. It sounds similar to a Kentucky Derby Pie except for the meringue (which looked terrific, by the way). I noticed the Longaberger basket too. Happy Easter!

    Yes, the Chocolate Pecan one has bourbon in it – how could you tell!? I love Longaberger baskets – the best.

    OK, So I read this post at my Gram’s earlier on my iPhone and I’ve been dying for Orange Meringue Pie now all day!!! That looks and sounds so good. I did get some Lemon Meringue Pie though ;)

    I’ve got a few pieces left but I’m not sure they will survive the mailing… I’ll send you the recipe if you want?

    I love pie’s. Apple pie is my fav. Both your pie’s look really good.

    I promised my hub I would make him an apple pie for his birthday… For some reason, I hate peeling apples and I’m always unsure which kind of apple to use = the stores have too many! so apple is my least favorite to make.

    two questions.

    How many out of the book have you already made…

    Do you do other dessert – What’s you favourite.

    I am partial to cherry pie myself.

    Oh yes – cherry pie. I need to make a sour cherry pie yet. I’ve made only two of the recipes so far; just got the book! I don’t make many other desserts, occasional coffee cake or zuc bread – easy stuff.

    I just made a fresh strawberry pie for the first time. (I’ve made other pies) It turned out great.

    I adore pie and it’s difficult to eat it on a regular basis here.

    I have never made a pie! They intimidate me. But I love love love love love apple pies!

    I have no issues with approaching a pie from the ‘cheater’ standpoint: buy a roll up kind of pie pastry, buy some frozen fruit, follow the few addition suggestions (sugar + cornstarch or tapioca) and bake! borrow the pie plate if you don’t have one… quick and easy and so tasty! I hardly ever make pie crust anymore but I will attempt all 30-40 in my new pie book. Someday.
