Baked Antipasto
This is incredible! I was introduced to it by someone who brought it to one of our parties; I asked for the recipe and took it to another party. Guaranteed to bring no leftovers home if you make and take!
6 eggs
1/4 lb. ham
1/4 lb. salami
1/4 lb. pepperoni
1/4 lb. mozzarella
1/4 lb. provolone
1/4 lb. American cheese
3 Tbsp parmesan
2 pkgs crescent rolls
1 jar roasted red peppers (drain, pat dry)
Salt & Pepper
1. Preheat oven to 375 °.
2. Beat eggs, salt & pepper and parmesan cheese in a bowl, set aside.
3. Layer one pkg crescent rolls on the bottom of a 13×9 greased pan.
4. Layer one meat and one cheese, then the red peppers.
5. Layer one meat and one cheese, then another meat and cheese layer!
6. Pour half the egg mixture over this.
7. Layer the other pkg of crescent rolls.
8. Pour remaining egg mixture over everything.
9. Bake for 35-45 minutes… check it! – you’ll know by the golden brown if it is done. Let it rest before cutting it.
Funny story – when I took this to our neighbor’s game night one Saturday evening, everyone raved! But they kept asking my husband, “Is it easy to make?”, “Oh, D__, this is wonderful! Can I have the recipe?”, “D__, is this hard?”, “Hey, D__, where did you get this recipe?!”
He kept answering, “I don’t know, Care made it.”, and “I didn’t make it.”, “Ask Care, she brought this.”
Ya see, everyone knows my hub to the be the real cook in the household. (especially the parties – he is the fun party host…) They were not only flabbergasted that I was the chef in this case, but that it was so good.

I will vouch that this recipe is wonderful — everyone always asks me for it when I make it. So funny to see it posted b/c I just made it for a Superbowl Party!
Yum! We always make SOUP for the Super Bowl and this year’s selections were particularly tasty. We made Southwestern Corn and Roasted Red Pepper Soup for AZ and two soups for Pittsburgh: a pierogi soup and a stuffed pepper soup.
Oh yeah…just a few calories. My arteries are screaming as I read it!

First of all, this recipe sounds a-mazing.
I had my first day of substitute teaching yesterday! They finally called me after two weeks of exams with all of the teachers present and a whole week off last week for snow. I subbed for a high school English teacher and it was fairly boring. I had some problems with the kids, they mostly didn’t want to sit still or keep quiet. They kept getting up to talk to their friends and had their cell phones out, finally I had to threaten to take the phones away. It was nice because it was a class I could help with, I had read the story they were reading when I was in high school (and actually remembered it).
I also was asked if I was old, married, or went to lots of parties. They asked me if I would take them to parties because they were over 18. Of course, I said no.
It was fun though, and I got to make a little money

I subbed again yesterday at the grade school and I think I prefer the older kids. The 1st and 2nd graders are cute but once I lose them, what chaos!! eek.

Well, heck, if Care can make it maybe even Bookfool can! LOL Thanks for the honor, dear. We are loving that oven, but it was kind of painful paying the Discover bill this month. It included an oven, my son’s wisdom-teeth extractions and a somewhat expensive marathon training program. Yikes! Next month’s is just as bad. Isn’t it wild how everything seems to fall apart in a house at the same time?
Yikes! I am hoping to make some cinnamon rolls this evening; I got to help with the Intro to Food class at the high school as part of my subbing duty and it was so fun. Marathon training programs? I’ve been thinking about hiring a trainer – again, there’s that thinking-not-doing approach that just doesn’t seem to work very well.
It contains most of the food groups, so it must be good for you, right?

LOL…I swear I didn’t make it for breakfast! I stuck with boring old cereal. But I did immediately put all the ingredients on the shopping list.
But it would work for breakfast! I’m one of those people that often has ‘breakfast’ food for dinner and/or pie or pizza for breakfast…
Sounds yummy! My roommate and I sound like you and your husband – she bakes and decorates cakes for a living, so everyone always assumes that EVERYTHING made in the kitchen is because of her. She’s the baker, but I’m the cook. Between the cook of us, our apartment is really well-fed.

Okay, I’ve bookmarked this recipe. As my husband is also quite the chef and I’m terrible in the kitchen (but I do try as I have no choice but to feed my kids while hubby’s at work). Sometimes it’s just hard to think of things to make. So I’ll let you know if and when I do try this.. thanks, Care!
